Spicy Chickpea, Banana and Marmite Pancakes…

OK, I promised it so here it is, possibly the best post-ride snack I’ve ever devised…a nice balance of carbs and protein (from the chickpeas) plus salt (to replace that lost through sweat) and vitamin B (for your metabolism) from the Marmite. Aside from all the nutritional gumpf they taste ace, if you like Marmite.

I can’t tell you exact quantities, other than you need one banana (!) but you’ll get the idea. So….

Slice a banana length-ways and fry it in an oiled pan till browned around the edges then set to one side.
Mix a few tablespoons of chickpea flour with water, using a hand-blender, to make a nice pouring consistency of batter. Blend in a couple of gloves of garlic, a good dash of Tabasco, a few crystals of sea salt, a teaspoon of cumin and a ‘drizzle’ of olive oil. Pour into a hot, lightly oiled frying pan and cook on one side ’till bubbles appear and you can safely flip it. Cook other side till nicely browned. Put a good dollop of Marmite onto the pancake while still in the pan – the heat will let you spread it out easily. Then slap the banana in the middle, wrap the whole thing up and enjoy. Yum.

Tip: also really tasty with smoked paprika instead of the cumin and garlic.
